Check out the healthfood stores around the city for free-range organic eggs. I know several farmers out there have started getting their chickens to produce them (basically the chickens eat organic flax seed, so you don't have to!)

We should trade salmon recipes . . . though you are in a much better position than me to get good, fresh, wild salmon. Lucky! Whenever I go to BC I gorge on salmon. Order it in every restaurant. Cook it up after buying it fresh from the docks (if I can). MMmmmm. Salmon. I miss the good stuff so.

I will be thinking of you. So happy to hear you have good bosses who are supportive and that you are going back gradually.

Take are of yourself.

I am sure you know this but fresh ground flax can be substituted instead of eggs for baking, it is one one tbsp ground flax mixed with three table spoons water for every egg. When I baked I used it all the time and there was no difference to taste or in the way it turned out.

Hugs

Good luck with work! When I went back I was a bit trepidacious. But it was fine -- moreso than I thought it would be.

That said, take it as slow and easy as you need to.

While not as good in the Omega thingie, sea perch has a fair bit, is milder, and lighter and takes well to any sauce.

And omega-enhanced eggs and bread are legit. Trick is to find free range omega enhanced ones.
